Kinu by Takagi, Mandarin Oriental, Bangkok, Thailand
One of Bangkok's most famous heritage hotels is also home to a new Japanese kaiseki-style restaurant Kinu by Takagi. The two-Michelin-starred chef Takagi Kazuo of Japan's Kyoto Cuisine Takagi specializes on Kyo-ryori cuisine originating from Kyoto. The 10-course seasonal menus feature a typical Japanese aesthetic and can be washed down with sake.

Halapua, Kapuhala Samui, Thailand
The first plant-based fine dining restaurant on Koh Samui, Halapua's chef Gregory Hill uses local produce from the on-site farm and gives classic French dishes a modern twist. Get there to discover that plant-based cuisine is neither tasteless nor boring.

Char by Four Seasons Resort Chiang Mai, Thailand
Northern Thai cuisine traditions at their best are showcased in the newly launched Char in Chiang Mai. Over 70 percent of all the dishes are cooked over open flames and desserts are no exception with chargrilled pineapples or fermented sticky rice in a cheesecake being a highlight. A significant part of the ingredients is locally sourced.
